Recipe: Brown Butter Almond Crinkle Cookies

Hey cupcakes! I know my last recipe post was also for cookies (read that Peanut Butter cookie post if you haven't already), but I baked these cookies the other day and just HAD to share the recipe with you all! :D I have always been a huge fan of cookies containing almond extract or almond paste and these cookies have the perfect amount of almond flavoring - plus, they are easy to make (and the recipe makes a TON of cookies)!


What You Need:
-10 tablespoons of butter (or 1 stick and 2 tablespoons)
-1 cup sugar
-1/4 cup brown sugar
-2 eggs
-1/2 teaspoon vanilla extract
-1/2 teaspoon almond extract
-2 1/2 cups flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-For sugar coating: 1/2 sugar and 1/2 powdered sugar

What To Do:
1. To brown the butter, heat it in a small saucepan over medium high heat (swirling it as it melts). This process should only take about 2-3 minutes (the butter will foam and then turn light brown. I couldn't actually see it turn brown so I burned my butter a little... I would just time it for 2-3 minutes and then take it off regardless of color).
2. Transfer the butter to a different bowl to let cool.
3. After the butter is fully cool, add it and the sugars (white and brown) to the bowl of an electric mixer and cream together on medium speed (or beat by hand).
4. Add eggs and extracts and mix until combined.
5. In another bowl, mix together flour, baking powder, and salt.
6. Slowly add the dry ingredients to the wet ingredients, mixing the dough on low speed. Mix until everything is incorporated.
7. Cover the bowl and let chill in the fridge for 1 hour.
8. Preheat oven to 350 degrees.
9. Prep the sugar coating: put the sugar and powdered sugar in separate bowls.
10. Scoop dough into balls and roll in sugar and then powdered sugar (depending on the size of the ball, you can make anywhere from 2-4 dozen!). The more powdered sugar, the more cracked/crinkle effect!
11. Place dough balls on parchment covered baking sheet.
12. Bake for 12 minutes.
13. Remove from pan onto wire rack to cool before storing them in an airtight container. These cookies are great warm too! :)
