Recipe: Banana Bread Cookies 🍪

Hey muffins! Do you ever have to put your too-browned bananas into the freezer? I definitely do (if I don't turn them into PB Frozen Snacks first haha)! In preparation of moving out of my summer apartment, I was sorting through my fridge and freezer a couple of weeks ago to make sure I ate up all my food. I noticed that I had two frozen bananas and wanted to figure out something to do with them. 🤔 As I don't have a bread pan, making some banana bread was out of the question... Or so I thought! Pinterest gifted me with this delicious banana bread cookie recipe, and it is now my second fave (behind the classic Pumpkin Chocolate Chip ones I made all the time). I definitely had to share it with you all 🎉

What You Need:
-1/2 cup salted butter
-1 cup sugar
-2 eggs
-pinch of salt
-2 medium bananas (frozen or ripe)
-1 tsp baking soda
-2 cups flour

What To Do:
1. Preheat the oven to 350 degrees.
2. If you don't have a nonstick baking sheet, spray some cooking spray (or butter) onto your pan. I used a nonstick baking sheet and didn't need to use any sort of grease on it.
3. Blend together butter and sugar until it is fluffy. I didn't have an electric mixer with me when I made these, and they turned out just fine with me whipping the batter together by hand.
4. Add eggs and salt. Blend (or mix by hand) again.
5. Add bananas and baking soda. Blend/mix.
6. 1/2 cup at a time, stir in the flour until the dough is well blended.
7. Drop the batter onto the baking sheet.
8. Bake for 15 minutes or until the edges turn golden.
9. Take them off the hot baking sheet to cool on a wire rack.
10. Serve hot out of the oven or when they are cooled!
