Recipe: Quick & Easy Cauliflower "Rice"

Hey muffins! Does your cauliflower ever start to brown before you have the chance to make it? Never fear - this quick and easy recipe is perfect for cauliflower that is just starting to get a little brown around the edges! I love to save food waste by finding ways to turn vegetables into tasty meals, and this cauliflower "rice" is the perfect side to any meal. 😊 Let's jump right into the recipe!


What You Need:
-Head of cauliflower
-1/3 cup diced onion
-Olive oil
-Salt
-Pepper
-Skillet

What To Do:
1. Rice your cauliflower - be warned, this does get messy! You can rice the head of cauliflower in one of two ways:

a. Grate your cauliflower using a cheese grater. To make sure it doesn't get soggy, I suggest using the thicker/bigger grate. 


b. Finely chop the cauliflower. While this is the method I used (as I don't have a grater), it does take much longer. 

2. Pour a little bit of olive oil into a skillet to coat it.
3. Over medium to high heat, stir the diced onions around until they are translucent and soft (this should take about 5 minutes). If you do not stir the onions they might burn, so make sure you are watching them! 
4. Pour the cauliflower into the skillet.
5. Season (to taste) with salt and pepper until the cauliflower is soft.
6. Serve hot! Enjoy 😃
